Grilled Thai Spice Chicken Sliders

Mix in Thai spices to add a kick to your barbecue.

Ingredients
    Chicken Sliders
  • 9 Kings Hawaiian Dinner Rolls
  • 1 pound Ground Chicken
  • 1/4 cup chopped Green Onion
  • 1 tablespoon chopped Fresh Cilantro
  • 1 tablespoon Thai Roasted Red Chili Paste
  • 2 teaspoons Fish Sauce
  • 1 Lime, juiced
  • Garlic Powder
  • Black Pepper
  • 9 Bok Choy Leaves
  • Fresh Cilantro
  • Vegetable Oil
  • Sriracha Mayo Sauce
  • 1/2 cup Mayonnaise
  • 1 tablespoon Sriracha
Method
    Sliders
  • Season a grill or grill pan with vegetable oil, turn to medium high heat.
  • Split the Kings Hawaiian Dinner Rolls. When grill is hot, heat both sides of the rolls until you have grill marks. Set them aside.
  • In a bowl season the meat with some garlic salt & pepper. Mix in the chili paste, fish sauce, lime juice, cilantro & green onion. Form 9 small slider patties.
  • Add some more oil to the grill pan if needed. Grill the burgers for a few minutes on each side until cooked through.
  • Sriracha Sauce
  • Whisk together the Sriracha sauce, mayonnaise & a pinch of black pepper.
  • Assembly
  • Spread some Sriracha on each piece of bread (top & bottom) Place a piece of cilantro & bok choy on one side, place the slider on top of that and the other half of the bun.

Spicy chicken & veg stir-fry

Ingredients

  • 400g mixed green vegetable
  • 1 tbsp sunflower oil
  • 4 skinless chicken breast, sliced
  • 1 red chilli, desseded and sliced
  • 120g sachet stir-fry oyster sauce (we used Blue Dragon, or make your own (see below)
  • 1 tbsp soy sauce
  • 25g toasted cashew , or more if you like
  • bunch spring onions , sliced

    Method

    1. Bring a pan of salted water to the boil, cook the green vegetables for 2 mins only, then drain.
    2. Heat the oil in a large frying pan or wok, then fry the chicken slices for 4 mins until almost cooked. Add the drained green veg, chilli, stir-fry sauce and soy sauce. Stir-fry briefly to heat everything through and to finish cooking the chicken. Mix in the cashews and spring onions, then serve.

Spiced pork with heaps of stir-fried greens

Ingredients

  • 100g jasmine or basmati rice
  • 1 tbsp stir-fry oil (look out for Blue Dragon or Sharwood’s), or vegetable oil
  • 250g pork  escalopes, sliced into thin strips
  • 1 bunch spring onions , trimmed and sliced
  • 175g broccoli , broken into small, bite-sized florets
  • celery  sticks, sliced
  • 2 heads of pak choi  or bok choi, broken into separate leaves
  • 2 tbsp chopped fresh coriander
  • lime , finely grated zest and juice
  • a few thin slices of red chilli (optional)
  • sweet chilli sauce, to serve (optional)

    Method

    1. Cook the rice in plenty of lightly salted boiling water – it will take about 12 minutes.
    2. Meanwhile, heat the oil in a wok or large frying pan. Add the pork and stir-fry briskly for 3-4 minutes. Tip in the spring onions, broccoli and celery and stir-fry over a high heat for 4 more minutes, then add the pak or bok choi for a minute or so until the leaves have wilted. Toss in the coriander and lime zest, squeeze in a little lime juice and add the chilli slices if you are using them. Season with salt and pepper. Heap on to warmed plates and serve with the drained rice – and sweet chilli sauce, if you like.

Stir-fried greens in oyster sauce

Ingredients

  • 600g assorted greens such as pak choi, asparagus and broccoli
  • 4 tbsp oyster sauce
  • 1 deseeded and finely chopped red chilli

    Method

    1. Steam greens, until tender. Remove and, while hot, toss with the oyster sauce and red chilli.

Beef, mushroom & greens stir-fry

Ingredients

  • 4 tbsp oyster sauce
  • 2 tbsp dark soy sauce
  • 1-2 tbsp vegetable oil
  • 400g beef  rump steak, thinly sliced across the grain into ½cm thick pieces
  • finger-tip length chunk fresh root ginger, chopped
  • 300g spring greens , sliced
  • 150g pack chestnut mushroom, sliced

    Method

    1. Mix the sauces together and set aside. Heat a wok until smoking hot, add 1 tsp oil, then stir-fry the meat until browned all over. You may need to do this in 2 batches, adding a little more oil. Remove the meat, then wipe the wok clean.
    2. Add a little more oil. Stir-fry the ginger until golden, then add the spring greens and mushrooms. Cook for 3 mins, stirring often, then add the steak and soy sauce mixture. Cook for 3-4 more mins until the sauce has thickened a little and everything is warmed through. Serve over rice or noodles.
