Cold Cucumber Soup

With just five easy-to-find ingredients (plus salt and pepper), you can enjoy this fresh cooled soup recipe, perfect for a warm day.

Ingredients

  • 3 medium seedless cucumbers
  • ¾ c. Thinly sliced green onions
  • 1 tbsp. lemon juice
  • 1 tsp. lemon zest
  • 1 tsp. Sea Salt
  • ½ tsp. Freshly ground pepper
  • 1½ c. vegetable broth
  • ½ c. sour cream

Directions

  1. Place cucumbers, green onions, lemon juice, lemon zest, sea salt, pepper, and vegetable broth in a blender or food processor and puree.
  2. Stir in sour cream and chill until very cold, about 1 hour.
  3. Serve topped with additional chopped cucumber, green onion, and lemon zest.
