Ingredients
- ¼ c. vegetable oil
- 9 oz. ground chicken
- 1 piece fresh ginger
- 3 tbsp. palm sugar
- ¼ c. fish sauce
- 4 c. roughly chopped escarole
- 24 wonton wrappers
- tbsp. soy sauce
Directions
- In a medium pot over high heat, heat oil. Add chicken, ginger, sugar, and fish sauce; cook until liquids are reduced, 5 to 7 minutes. Add escarole and cook until bright green, about 1 minute. Transfer to a paper towel-lined baking pan to cool, about 20 minutes.
- Place 1 tablespoon filling in center of 1 wonton wrapper. Moisten edges of wrapper. Pull up 2 opposite corners, then remaining corners, leaving the top open. Repeat. Steam dumplings in a steamer until translucent, 5 minutes. Serve with soy sauce.
