Skinny Panda Express Chow Mein
- 1 lb. rice noodles
- 1/2 c. low-sodium soy sauce
- 2 cloves garlic, minced
- 1 tsp. ground ginger
- 1 tbsp. extra-virgin olive oil
- 1 large onion, diced
- 2 stalks celery, thinly sliced
- 1/2 head cabbage
- In a large pot of boiling water, cook noodles according to package directions until al dente. Drain.
- In a small bowl, combine soy sauce, garlic, and ground ginger.
- In a large skillet, heat oil over medium-high heat. Add onion, celery, and cabbage and cook until tender, stirring occasionally, 6 to 8 minutes.
- Add noodles to skillet and soy sauce and stir until fully coated.
