Fried Sugar-Poached New Potatoes
- 10 new potatoes
- water
- ½ c. sugar
- 2 clove garlic
- peanut oil
- salt
- In a medium pot over high heat, cover potatoes with water. Add sugar and garlic. Bring to a boil, then reduce heat to medium-low and simmer until potatoes are fork-tender, 8 to 10 minutes; drain.
- In a large cast-iron skillet fitted with a candy thermometer, heat 1/4-inch peanut oil between 325 and 350 degrees F. Working in batches, pan-fry potatoes, turning frequently, until crispy and brown. Transfer to paper towels to drain excess oil. Let sit for about 2 minutes and season with salt. Serve hot, cold, or at room temperature.
