Avocado Toast

INGREDIENTS

  1. 2slices whole-grain bread, toasted
  2. 1avocado, sliced
  3. 1tablespoon olive oil
  4. 1teaspoon fresh lemon juice
  5. Kosher salt
  6. 1/8teaspoon red pepper flakes

DIRECTIONS

  1. Top the bread with the avocado. Mash the avocado lightly with a fork.
  2. Drizzle with the oil and lemon juice.
  3. Sprinkle with ½ teaspoon salt and the red pepper.

Quinoa Breakfast Bowl

INGREDIENTS

  1. 1cup quinoa
  2. 4large eggs
  3. 2tablespoons olive oil
  4. kosher salt and black pepper
  5. 1avocado, chopped
  6. 6ounces smoked salmon
  7. fresh lemon juice, for serving
  8. sliced scallions, for serving

DIRECTIONS

  1. Cook the quinoa according to the package directions.
  2. Meanwhile, heat the oil in a large nonstick skillet over medium heat. Add the eggs and cook, covered, 2 to 4 minutes for slightly runny yolks. Season with ¼ teaspoon each salt and pepper.
  3. Serve the quinoa topped with the fried eggs, avocado, and salmon, dividing evenly. Drizzle with the lemon juice and top with scallions.

Scrambled Eggs With Beans, Tomatoes, and Pesto

INGREDIENTS

  1. 4large eggs
  2. kosher salt and black pepper
  3. 3teaspoons olive oil
  4. 1/2cup grape tomatoes, halved
  5. 1/2cup low-sodium canned white beans, rinsed
  6. 1/4cup store-bought pesto
  7. 4slices whole-wheat bread, toasted

DIRECTIONS

  1. In a medium bowl, beat the eggs with 1 tablespoon water and ¼ teaspoon each salt and pepper.
  2. Heat 2 teaspoons of the oil in a large nonstick skillet over medium-high heat. Add the tomatoes and beans; cook, tossing occasionally, until warmed through, 1 to 2 minutes. Transfer to a plate and wipe the skillet clean. Heat the remaining teaspoon of oil in the skillet. Add the eggs and cook, stirring, until set but still soft, 1 to 2 minutes.
  3. Serve the eggs topped with the tomato mixture and pesto, accompanied by the toast.

Healthy Banana Bread

INGREDIENTS

  1. 6tablespoons unsweetened applesauce
  2. 1/4cup honey
  3. 2tablespoons dark brown sugar
  4. 2large eggs
  5. 3large ripe bananas, mashed (about 1 1/2 cups)
  6. 1/4cup unsweetened almond milk
  7. 1teaspoon baking soda
  8. 1teaspoon pure vanilla extract
  9. 1/2teaspoon ground cinnamon
  10. 1 1/2cups white whole-wheat flour

DIRECTIONS

  1. Heat oven to 325°F. Grease an 8-by-4 inch loaf pan.
  2. In a large bowl, combine the applesauce, honey, and brown sugar. Add the eggs and beat well. Stir in the mashed bananas and almond milk. Add the baking soda, vanilla extract, and cinnamon and stir.
  3. Gradually fold the flour into the banana mixture until just combined (do not overmix).
  4. Pour the batter into the prepared pan and bake until a toothpick inserted into the center of the loaf comes out clean, 50-60 minutes. Cover the top with foil if it begins to brown too quickly. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
