Black Bean and Feta Stuffed Burrito

INGREDIENTS

  1. 1/2cup brown rice
  2. 1cup Greek yogurt
  3. 1/4cup chopped fresh cilantro leaves plus 1 cup whole leaves
  4. 2tablespoons fresh lime juice
  5. kosher salt
  6. 2avocados, sliced
  7. 4ounces Feta, crumbled (1 cup)
  8. 1cup shredded red cabbage (from 1/8 small head)
  9. 115.5-ounce can black beans, rinsed
  10. 1/2cucumber, halved and thinly sliced
  11. 2cups shredded rotisserie chicken (optional)
  12. 1tablespoon hot sauce (optional)
  13. 4burrito-size tortillas, warmed

DIRECTIONS

  1. Cook the rice according to the package directions. Combine the yogurt, chopped cilantro, lime juice, and ¼ teaspoon salt in a small bowl.
  2. Divide the yogurt mixture, avocados, Feta, cabbage, beans, cucumber, chicken (if desired), and hot sauce (if desired) among tortillas, dividing evenly. Roll into 4 burritos.
