Green Beans with Orange Beurre Blanc

Punch up this side-dish recipe fast with the hardworking supermarket standby, orange juice concentrate.

Ingredients

  • ¾ lb. green beans
  • ½ medium shallot
  • 1 tbsp. white wine vinegar
  • 2 tbsp. dry white wine
  • 8 tbsp. cold unsalted butter
  • 2 tbsp. frozen orange juice concentrate
  • ½ tsp. salt
  • ¼ tsp. Freshly ground pepper

Directions

  1. Blanch green beans in boiling salted water for 3 minutes. Drain and immediately plunge into cold water for 30 seconds. Remove and set aside.
  2. Place shallot, white wine vinegar, and white wine in a small pot and bring to a simmer over medium heat until reduced by two-thirds, about 3 minutes. Reduce heat to low and whisk in butter, incorporating each tablespoon fully before adding the next. Remove from heat.
  3. Add orange juice concentrate, salt, and pepper. Pour over green beans and serve immediately.
