Green Beans with Orange Beurre Blanc
- ¾ lb. green beans
- ½ medium shallot
- 1 tbsp. white wine vinegar
- 2 tbsp. dry white wine
- 8 tbsp. cold unsalted butter
- 2 tbsp. frozen orange juice concentrate
- ½ tsp. salt
- ¼ tsp. Freshly ground pepper
- Blanch green beans in boiling salted water for 3 minutes. Drain and immediately plunge into cold water for 30 seconds. Remove and set aside.
- Place shallot, white wine vinegar, and white wine in a small pot and bring to a simmer over medium heat until reduced by two-thirds, about 3 minutes. Reduce heat to low and whisk in butter, incorporating each tablespoon fully before adding the next. Remove from heat.
- Add orange juice concentrate, salt, and pepper. Pour over green beans and serve immediately.
