INGREDIENTS
- 1cup couscous, cooked according to the package directions
- 2carrots, grated
- 3cups baby spinach
- 1/4cup chopped roasted pistachios
- 1tablespoon olive oil
- kosher salt and black pepper
DIRECTIONS
- While the couscous is still warm, fold in the carrots, spinach, pistachios, olive oil, and ¼ teaspoon each salt and pepper.
