Toasted Pistachio Muesli With Apple and Fig

INGREDIENTS

  1. 6cups old-fashioned rolled oats
  2. 1cup shelled roasted pistachios
  3. 1/2cup pure maple syrup
  4. 1/4cup poppy seeds
  5. 1/4cup sesame seeds
  6. 2teaspoons pure vanilla extract
  7. 1teaspoon ground ginger
  8. 1/2teaspoon fine salt
  9. milk, almond milk, or plain yogurt, for serving
  10. sliced apples, for serving
  11. sliced figs, for serving

DIRECTIONS

  1. Heat oven to 350° F. Combine the oats, pistachios, maple syrup, poppy seeds, sesame seeds, vanilla, ginger, and the salt in a large bowl. Transfer to 2 rimmed baking sheets. Bake, stirring and rotating the pans once, until golden brown, 18 to 24 minutes.
  2. Serve the muesli with milk, almond milk, or plain yogurt, topped with sliced apple and fig.
