Panzanella Salad

Instead of day-old crusty bread, this recipe calls for leftover pizza with fresh vegetables for a twist on the traditional Italian salad.
 Recipe: Panzanella Salad

Ingredients

  • 1 large red bell pepper
  • 1 large green bell pepper
  • 1 medium seedless cucumber
  • 1 large yellow tomato
  • 1 small red onion
  • 1 clove garlic
  • ½ c. packed fresh basil
  • 4 c. cubed Easy Cheese Pizza (2 slices)
  • 6 tbsp. white wine vinegar
  • ½ c. extra-virgin olive oil
  • ½ tsp. salt
  • ¼ tsp. Freshly ground pepper
  • whole fresh basil leaves

Directions

  1. Place chopped vegetables in a large bowl, add red onion, garlic, basil, and Easy Cheese Pizza.
  2. Whisk white wine vinegar, extra-virgin olive oil, salt, and pepper together and dress salad. Toss to mix and let sit for 15 minutes before serving. Garnish with whole fresh basil leaves.
