Ingredients
  • 3 pounds red potatoes, unpeeled and quartered (can use any other type of potato)
  • 2 cloves garlic, peeled
  • 1/4 cup butter
  • 3/4 cup milk (I used soy milk)
  • 1 teaspoon salt
  • 2 tablespoons ranch dressing seasoning powder
  • 1/2 cup bacon, chopped (I used real bacon bits)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup Parmesan Cheese
  • 1 tablespoon fresh chives, chopped
  • Additional bacon, cheese, and chives for garnish (optional)
Instructions
  1. Put the potatoes and garlic in a large pan and cover with water.  Bring the water to a boil.
  2. Reduce the heat and simmer for 25 minutes until the potatoes are tender.  Remove from heat and drain the potatoes.
  3. Mash the potatoes and garlic with the butter, milk, and salt.
  4. Then stir in the ranch seasoning, bacon, cheddar cheese, Parmesan Cheese, and chives.
