Ingredients
- 3 pounds red potatoes, unpeeled and quartered (can use any other type of potato)
- 2 cloves garlic, peeled
- 1/4 cup butter
- 3/4 cup milk (I used soy milk)
- 1 teaspoon salt
- 2 tablespoons ranch dressing seasoning powder
- 1/2 cup bacon, chopped (I used real bacon bits)
- 1/2 cup shredded cheddar cheese
- 1/4 cup Parmesan Cheese
- 1 tablespoon fresh chives, chopped
- Additional bacon, cheese, and chives for garnish (optional)
Instructions
- Put the potatoes and garlic in a large pan and cover with water. Bring the water to a boil.
- Reduce the heat and simmer for 25 minutes until the potatoes are tender. Remove from heat and drain the potatoes.
- Mash the potatoes and garlic with the butter, milk, and salt.
- Then stir in the ranch seasoning, bacon, cheddar cheese, Parmesan Cheese, and chives.
