Hummus, Fennel, and Olive Pocket

INGREDIENTS

  1. 1/4small fennel bulb, sliced
  2. 1/4red bell pepper, sliced
  3. 2tablespoons parsley leaves
  4. 2tablespoons pitted kalamata olives, sliced
  5. 1tablespoon fresh lemon juice
  6. 2teaspoons olive oil
  7. kosher salt and black pepper
  8. 1pita, halved
  9. 1/4cup hummus

DIRECTIONS

  1. In a medium bowl, combine the fennel, bell pepper, parsley, olives, lemon juice, oil, and a pinch each salt and pepper.
  2. Form sandwiches with the pita, hummus, and vegetable mixture.
