Tuna Risotto

 Ingredients

  • For 4:
  • 300g plain rice (boil)
  • 1 onion
  • 2 tins of tuna
  • 2 garlic cloves
  • 2 teaspoon black pepper/salt
  • 1 tin sweetcorn
  • 1 tablespoon low fat mayo (eg: Helmanns lighter than light)

 Method

Mix in the low fat mayo with the drained tuna. Boil the rice and mix in a drained can of sweetcorn. Peel and chop the onion and garlic and add to the rice, seasoning with salt and pepper. Add the tuna mayo mixture and serve.
